Custard Bake
The Keto friendly version of the Custard Toast recipe.
I’m sure you’ve all seen the viral custard toast, this is a play on that recipe without the toast!
Introducing the custard bake!
I had some sugar-free condensed coconut milk at home and was wondering how I could use it in a recipe. So I mixed it in with some eggs & fruit and voila…
Have it for breakfast. Have it for dessert. Have it after breakfast for dessert, trust me you are going to want to have it!
What you’ll need:
2 eggs
1/4 cup of sugar-free condensed coconut milk
1 tsp of arrowroot powder
handful of fruit of your choice. (I used blueberries and raspberries)
Greased oven-proof pan or dish
Substitutes:
I’m using sugar-free condensed coconut milk for this recipe, which I managed to find on Amazon. However, if you are unable to get this product in your location, then replace this with either cream, greek yoghut or coconut milk. If you opt for any of the mentioned substitutions, add in some sweetener (ideally allulose or erythritol) into the mixture. You want to use a powdered or liquid version so you do not get a grainy texture in the bake.
I’ve added a small amount of arrowroot powder to the egg mixture. This will add in some additional carbohydrates to the nutritional profile, but it does help with keeping the eggs soft and creamy, so you do not end up with a rubbery, eggy texture. Feel free to omit the arrowroot powder, if you are actively reducing your carbohydrates.
I’ve added some berries to this recipe. I opted for blueberries and raspberries. Both are considered as low sugar fruit and are likely to have a minimal impact on your blood sugar levels. You could also try sugar-free chocolate chips, I love this brand of sugar free white chocolate or even chopped nuts.
What to do:
First, you want to preheat your oven at 200c.
Then, mix together the eggs, the condensed milk and the arrowroot powder until its fully combined.
Add your fruit (or whatever filling you are using) into a greased oven-proof dish or pan. Then pour over the egg mixture.
Pop it in to the oven and bake for about 15 minutes. When it is ready, it should be set with a smooth, jelly-like wobble.
